Disclosed is a cometic skin care product comprising a therapeutically effective amount of a honey extract comprising phenolic compounds comprising an MMP inhibitory phenolic extract and the cosmetic skin care product also comprising a mixture of at least ethanol and water to reduce the loss of skin elasticity and therefore the formation of wrinkles. Also disclosed is a method of producing cosmetic skin care product comprising a honey extract rich in phenolic compounds, comprising an MMP inhibitory phenolic extract including the steps of: (a) mixing a honey selected from the genus Leptospermum, Knightia, Kunzea and combinations thereof with ethanol； (b) separating the mixture to substantially remove a saccharide concentrated first phase from a second phase including ethanol, water and one or more MMP inhibitory phenolic compounds； (c) conducting a further separation step to increase the phenolic compound concentration by reducing the ethanol and/or water concentration； and (d) collecting the resulting phenolic compound concentrate.
