The present invention relates to a manufacturing method of soybean paste containing evening primrose extract, and soybean pasted manufactured thereby. The present invention provides a manufacturing method of soybean paste containing evening primrose extract, which comprises (a) a step of manufacturing soybean blocks by adding evening primrose water to soybean； (b) a step of fermenting and aging the soybean blocks； (c) a step of adding saline water to the fermented and aged soybean blocks； and (d) a step of fermenting and aging by adding red pepper and oak charcoal to the fermented soybean blocks, and soybean paste manufactured thereby.본 발명은 달맞이꽃 추출물 함유 된장의 제조방법 및 이에 의해 제조된 된장에 관한 것으로, (a) 대두에 달맞이꽃물을 첨가하여 메주를 제조하는 단계； (b) 상기 메주를 발효 숙성하는 단계； (c) 상기 숙성된 메주에 염수를 첨가하는 단계； 및 (d) 상기 메주에 고추 및 참숯을 첨가하여 발효 숙성하는 단계；를 포함하여 이루어지는 달맞이꽃 추출물 함유 된장의 제조방법 및 이에 의해 제조된 된장을 제공하고자 한다.
