PROBLEM TO BE SOLVED: To provide a manufacturing method of oil and fat rich in USU by a transesterification reaction using 1,3-position specific lipase on a raw material oil and fat having specific saturated aliphatic acid content and raw material aliphatic acid having specific saturated aliphatic acid content or lower aliphatic acid ester thereof, which has good efficiency with a level industrially usable.SOLUTION: By using oil and fat containing palmitic acid as a raw material oil and fat, palmitic acid derived from the raw material oil and fat and unreacted C18 unsaturated aliphatic acid or lower aliphatic ester thereof can be separated by distillation by using difference of each boiling point and the resulting unreacted C18 unsaturated aliphatic acid or lower aliphatic ester thereof can be effectively reused as the raw material aliphatic acid or lower aliphatic ester thereof.SELECTED DRAWING: NoneCOPYRIGHT: (C)2017,JPO&INPIT【課題】本発明の課題は、特定の飽和脂肪酸含量を持つ原料油脂と特定の不飽和脂肪酸含量を持つ原料脂肪酸又はその低級脂肪酸エステルを1,3位置特異性リパーゼを用いるエステル交換反応によりUSUを含む油脂の製造において、商業的に使用できるレベルの効率の良い、USUに富む油脂の製造法を提供することである。 【解決手段】原料油脂にパルミチン酸を含む油脂を使えば、原料油脂に由来するパルミチン酸と未反応のC18の不飽和脂肪酸又はその低級脂肪酸エステルがそれぞれの沸点の差を利用して蒸留によって分離でき、得られた未反応のC18の不飽和脂肪酸又はその低級脂肪酸エステルは原料脂肪酸又はその低級脂肪酸エステルとして有効に再使用できる。【選択図】なし
