The invention relates to a process for preparing an olive extract with a melanin content greater than 5% by weight of the total weight of the extract. The invention is characterized in that said method comprises the following steps of:- mixing a raw material from the olive with an aqueous alkaline solution；maceration of the mixture obtained；filtration of the macerate；- mixing an acidic compound with the filtrate obtained；filtering the mixture in order to obtain a wet cake；- drying the wet cake； andrecovering a solid extract comprising a melanin content greater than 5% by weight relative to the total weight of the extract.L'invention concerne un procédé de préparation d'un extrait d'olive à teneur en mélanine supérieure à 5% en poids du poids total de l'extrait. L'invention se caractérise en ce que ledit procédé comprend les étapes suivantes de :- mélange d'une matière première issue de l'olive avec une solution aqueuse alcaline ；- macération du mélange obtenu ；- filtration du macérât ；- mélange d'un composé acide au filtrat obtenu ；- filtration du mélange afin d'obtenir un gâteau humide ；- séchage du gâteau humide ； et- récupération d'un extrait solide comprenant une teneur en mélanine supérieure à 5% en poids du poids total de l'extrait.
