The present invention relates to a pressure type roasting apparatus and a pressure type roasting method using the same. The pressure type roasting apparatus of the present invention is characterized by comprising: a press roasting unit installed in a case, pressing to roast food materials, and having a plurality of coupling members installed at one end thereof； a vacuum packing unit installed in the case to be positioned below the press roasting unit and vacuum-packing the food materials； a pressure supply source connected to one of the plurality of coupling members of the press roasting unit via a hollow tube and supplying pressure to a press roasting chamber； a negative pressure supply source connected to the vacuum packing unit via a hollow tube and supplying negative pressure to the vacuum packing unit； and a pressure discharging unit respectively connected to one of the plurality of coupling members of the press roasting unit, the pressure supply source, and the negative pressure supply source via hollow tubes, maintaining the pressure of the press roasting unit by the pressure supplied from the pressure supply source, and discharging the pressure of the press roasting unit by the negative pressure generated by the negative pressure supply source.본 발명은 가압식 구이장치 및 이를 이용한 가압식 구이방법에 관한 것으로, 본 발명의 가압식 구이장치는 케이스에 설치되며 식재료를 가압하여 구이하며 일단에 다수개의 체결부재가 설치되는 가압구이기와； 상기 가압구이기의 하측에 위치되도록 케이스에 설치되어 식재료를 진공 포장하는 진공포장기와； 상기 가압구이기의 다수개의 체결부재 중 하나와 중공관으로 연결되어 가압구이챔버로 압력을 공급하는 압력공급원과； 상기 진공포장기와 중공관으로 연결되어 진공포장기에 부압을 공급하는 부압 공급원과； 상기 가압구이기의 다수개의 체결부재 중 하나와 상기 압력공급원과 상기 부압 공급원에 각각 중공관으로 연결되어 압력공급원으로부터 공급되는 압력에 의해 가압구이기의 압력이 유지되도록 하며, 부압 공급원에 의해 발생되는 부압에 의해 가압구이기의 압력이 배출되도록 하는 압력배출기로 구성되는 것을 특징으로 하는 한다.
