An unpolished rice processing method is provided. In order to resolve a technical problem, the present invention provides an unpolished rice processing method, which adds a maturation liquid to unpolished rice to mature the same, and then polishes the unpolished rice, thereby enabling the production of rice that does not deteriorate even at room temperature and maintains quality for a long time. The unpolished rice processing method, according to an embodiment of the present invention, for solving the technical problem, comprises the steps of: adding a maturation liquid to unpolished rice to mature the same; and polishing the unpolished rice. According to the present invention, a maturation liquid is added to unpolished rice to mature the same, and then the unpolished rice is polished such that rice that does not deteriorate even at room temperature and maintains quality for a long time can be produced.
