PROBLEM TO BE SOLVED: To provide a hybrid type retort apparatus which can suppress oxidation when performing, for example, thawing and sterilization of frozen canned foods and has improved convenience during operation.SOLUTION: A retort apparatus comprises a treatment tank 2 for storing an object to be treated, a hot water spraying part 100 for spraying hot water into the treatment tank, a steam supply part 200 for supplying steam into the treatment tank, and a control part 600 for controlling the hot water spraying part and the steam supply part.
