PROBLEM TO BE SOLVED: To provide a blade-replacing type dried bonito slicer which is facilitated in the replacement and adjustment of a cutting blade.
SOLUTION: Replacement blade attachment/detachment slits 52 or penetration holes 51 are formed at both sides or a one side of each blade edge 46 formed at a disk 40, and a replacement blade holder which holds a replacement blade 27 at its tip is detachably attached to the disk 40 so as to be attachable and detachable via the replacement blade attachment/detachment slits 52 or the penetration holes 51. When the replacement blade 27 is damaged, only the replacement blade 27 is pushed out from the slits 52 or the penetration holes 51, or pulled out from the slits or the penetration holes by being hooked with the disk 40 attached as it is, and the blade is replaced with a new blade.
