PROBLEM TO BE SOLVED: To provide a dispersion stabilizer, even under a salt-containing condition or an acidic condition and a high temperature condition, capable of uniformly dispersing a solid matter into a liquid without requiring procedures such as inversion and without depending on grain sizes, and a solid matter-dispersed food product containing the dispersion stabilizer and the solid matter to be dispersed.SOLUTION: Provided is a dispersion stabilizer containing: high methoxyl pectin (A component) xanthan gum (B component) and κ-carrageenan (C component), in which the A component, the B component and the C component are included in such a manner that the blending ratio between the A component and the B component being 2:8 to 7:3 in A:B by weight ratio and the blending ratio between the total of the A component and the B component and the C component being 5:5 to 9:1 in A+B:C by weight ratio.
