CONSTITUTION: A producing method of cookies using yacon instead of flour comprises the following steps: mixing 1~25wt% of yacon powder, 25~50wt% of flour, 14~15wt% of butter, 17~18wt% of sugar, 16.5~17.5wt% of eggs, 0.1~0.2wt% of salt, and 0.3~0.4wt% of baking powder； and resting the mixture, and baking the mixture with an oven. 본 발명은 야콘쿠키 제조방법에 관한 것으로, 이는 프럭토올리고당과 섬유소가 풍부한 야콘을 첨가물로 건강 기능성과 기호도가 뛰어난 쿠키의 제조를 가능하게 하기 위한 것이다. 이를 위해 본 발명은, 야콘분말 1~25중량%와, 밀가루 25~50중량%와, 버터 14~15중량%와, 설탕 17~18중량%와, 계란 16.5~17.5중량%와, 소금 0.1~0.2중량%와, 베이킹파우더 0.3~0.4중량%를 혼합한 혼합물을 휴지시킨 다음으로 오븐에서 구워내는 특징으로 하여, 저장성이 낮은 야콘의 활용도를 높여 야콘 생산 농가 및 관련 가공업체의 소득증대에 기여할 수 있다.
