The present invention relates to a process for obtaining by fermentation a polysaccharide grown on extracts of sweet sorghum (Sorghum bicolor var. saccharum) standardized at 5% sucrose, without additions of mineral salts or yeast extract, with applications in the tissue and reparative engineering for regenerating burnt or wounded tissue and for reconstructing the adipose tissue. The process involves the treatment with a polyfructan (levan) solution produced by the Gram negative Zymomonas mobilis bacteria of the dermal cells and the adipogenic progenitors, respectively, the growth on solid and liquid medium, in the absence of some additions of mineral salts or growth factors, the treatment effect being controlled by the analysis of the tissue metal proteinase profile, adhesion and cell proliferation analyses as well as adipogenic differentiation which are performed by specific techniques, such as gelatin zymography, phase-contrast microscopy, fluorescence and spectrophotometry assays.Prezenta invenţie se referă la un procedeu de obţinere prin fermentaţie a unui polizaharid crescut pe extracte de sorg zaharatstandardizat la 5% sucroză, fără adaosuri de săruri minerale sau yeast extract, cu aplicaţii în ingineria tisulară şi reparatorie, de regenerare a tegumentului ars sau rănit şi pentru reconstrucţia ţesutului adipos. Procedeul implică tratarea, cu o soluţie de polifructan (levan) produs de bacteria Gram negativă, a celulelor dermale şi, respectiv, a progenitorilor adipogenici, creşterea pe mediu solid şi lichid, în absenţaunor adaosuri de săruri minerale ori factori de creştere, efectul tratamentului fiind monitorizat prin analiza profilului metaloproteinazelor tisulare, analize de adeziune şi proliferare celulară, precum şi cele de diferenţiere adipogenică care se realizează prin tehnici specifice, cum ar fi gelatin zimografia, microscopia în contrast de fază, analize de fluorescenţă şi spectrofotometrie.
