This utility model aims to provide a method for manufacturing sweet potato wine comprising the following steps: wash the potato tubers with water to remove dirt; peel the tubers and sort out weevil infected tubers; grate peel tubers; weigh 500 grams of black glutinous rice and 500 grams tubers and place it inside a cookware, add 1 liter of potable water to the cookware; let the mixture boil and start the cook time of 12 minutes when the boiling starts; transfer cooked mixture in a clean and sterilized cheesecloth; allow the mixture to cool at room temperature to 40-45 deg C; add 3 grams of wine starter to cooled mixture and transfer the mixture into a sterilized stainless fermenter and cover it with sterilized manila paper; allow the mixture to ferment for 7 days while occasionally mixing every 24 hours; harvest the gathered wine extract and transfer it inside a sterilized container; pasteurize the harvested wine extract for 30 minutes at 67-70 deg C; let the pasteurized wine settle for at least one month; and decant the settled extract to separate the wine from the sediments; and finally transfer the wine extract to wine bottles.
