PROBLEM TO BE SOLVED: To provide a process for efficient improvement in emulsifying power of a sugar beet pectin and a process for production of a modified sugar beet pectin with high emulsifying power.

SOLUTION: The sugar beet pectin (raw material) is irradiated with an ionizing radiation in the presence of water (an aqueous solution, suspension or paste) to give a modified sugar beet pectin with excellent emulsifying power, and further, with improved thickening power resulting from its polymerization. Particularly, the process is useful, since, by the adoption of above-mentioned treatment process, it can efficiently give the sugar beet pectin with favorable emulsifying power while preventing the discoloration and the aggregation by adhesion during treatment.
