The present invention provides a method to converse the intrinsic sugar of a juice into indigestible oligosaccharides (such as, low-polymerization fructose and sorbitol). The present method comprises using a Zymomonas mobilis sludge and fructosyltransferase as well as pressure treatment. Taking advantage of the present method, the drawbacks of drinking juices, such as too many sugar and calorie intake can be obviated, and thereby the present invention can offer healthier option to the consumers.本發明提供一種將果汁中的內生醣轉化為難消化寡醣(如低聚果醣)和山梨醇的方法。本發明方法包含使用運動發酵單孢菌菌泥及果糖基轉移酵素,並包含壓力處理。藉助本發明之方法,可消除飲用果汁時攝取過多糖分及熱量的缺點,從而本發明可提供消費者更健康的選擇。
