The present invention relates to a method for preparing ribs for a rib stew dish. According to the present invention, the method includes a primary aging step and a secondary aging step with a tumbling step to enhance the aging efficiency by using the primary and secondary aging processes. Unlike a conventional scheme, a consumer can conveniently prepare and consume the rib stew dish within a short period by only cooking the prepared ribs without a separate aging process. The ribs, which are for preparing the rib stew dish, can be salted and treated to tenderize the meat texture to additionally enhance the taste and flavors thereof. A tumbling unit has a heating unit and a cooling unit arranged on a side of a rotary drum to repeatedly heat and cool the exterior of the rotary drum repeatedly rotating in normal and reverse directions. The salting and meat texture tenderizing operations are executed in the tumbling step through the tumbling unit. An automated process is used to shorten the time taken to prepare the ribs for the rib stew dish.
