A process of forming a freeze-dried soluble coffee product comprises forming a concentrated coffee extract 30 foaming 50 the concentrated coffee extract to form a foamed coffee intermediate incorporating 31finely ground roasted ground coffee 40 into the foamed coffee intermediate freezing the intermediate to form a frozen coffee intermediate grinding and sieving the frozen coffee intermediate to form a ground coffee intermediate 35 and drying 36 the ground coffee intermediate to form the freeze-dried soluble coffee product 37. The freeze-dried soluble coffee product may comprise 10-30% dry weight roasted ground coffee and 70-90% dry weight soluble coffee. Following incorporation of the roasted ground coffee the intermediate may be subjected to further foaming or pre-freezing steps A process of forming a spray-dried soluble coffee product wherein roasted ground coffee is incorporated into a concentrated coffee extract post foaming of said extract and before the spray drying stage.
