PURPOSE: A composition for removing astringency of persimmons and a removing method therefor are provided to prevent the blackening of persimmons and to improve marketability. CONSTITUTION: A composition for removing astringency of persimmons comprises one selected among potassium hydroxide, phosphate, and citric acid as an active ingredient. The potassium hydroxide and phosphate are mixed at a ratio of 1:1 ~ 1:2. The 0.2-1 part citric acid is added to the 100 parts composition for removing astringency of persimmons. The composition for removing astringency of persimmons is treated on persimmon stalks and the composition-treated persimmons are kept at room temperature for 1-2 weeks.본 발명은 떫은 감의 탈삽용 조성물 및 이를 이용한 탈삽 방법에 관한 것으로, 보다 상세하게는 KOH 용액 및 H3PO4 용액의 혼합용액 또는 구연산을 떫은 감에 처리하여 탈삽시킴으로써, 감의 상품성을 유지하고 중금속 등 유해성분을 유발하지 않는 떫은 감의 탈삽용 조성물 및 이를 이용한 탈삽 방법에 관한 것이다.
