This invention is directed to a system for cooling a product comprising an insulated housing a cooling means inside the housing for cooling the product so as to establish a cooling zone inside the housing and a transport assembly inside the housing adapted for continuously transporting the product to be cooled into and out of the cooling zone, the assembly comprising an inlet assembly for delivering food products for processing, an outlet assembly for discharging food products for subsequent processing, an intermediate assembly disposed for coaction with the inlet assembly and the outlet assembly to provide a processing zone without suspending movement of the inlet assembly and the outlet assembly.Linvention concerne un système destiné à refroidir un produit qui comprend un boîtier isolant un élément de refroidissement à lintérieur du boîtier destiné à refroidir le produit de manière à établir une zone de refroidissement à lintérieur du boîtier et un ensemble de transport à lintérieur du boîtier conçu de manière à transporter en continu le produit à refroidir dans et hors de la zone de refroidissement, lensemble comportant un ensemble dentrée destiné à délivrer des produits alimentaires pour traitement, un ensemble de sortie destiné à décharger les produits alimentaires pour traitement ultérieur, un ensemble intermédiaire destiné à la co-action avec lensemble dentrée et lensemble de sortie afin de fournir une zone de traitement sans interrompre le mouvement de lensemble dentrée et de sortie.
