The present invention relates to a method for preparing an extract of Cudrania tricuspidata using deep sea water and an extract of Cudrania tricuspidata prepared by the method, and more specifically, to a method for preparing an extract of Cudrania tricuspidata using deep sea water and an extract of Cudrania tricuspidata prepared by the method, wherein the method comprises: a first step of mixing deep sea water and Cudrania tricuspidata to marinate the Cudrania tricuspidata with the deep sea water； a second step of putting a sweetener into the Cudrania tricuspidata marinated with the deep sea water and then fermenting and aging the Cudrania tricuspidata； and a third step of putting the fermented and aged Cudrania tricuspidata and the desalted deep sea water into an extractor and then extracting an extract of Cudrania tricuspidata from the extractor. As such, the deep sea water is used to prepare the extract of Cudrania tricuspidata, thereby further supplementing active ingredients of the Cudrania tricuspidata with functional ingredients of the deep sea water, so that provided can be an extract of Cudrania tricuspidata having more enhanced functionality.본 발명은 해양심층수를 이용한 꾸지뽕 추출물의 제조방법 및 그 제조방법에 따라 제조된 꾸지뽕 추출물에 관한 것으로서, 해양심층수와 꾸지뽕 재료를 혼합하여 꾸지뽕 재료를 절이는 제1단계, 상기 해양심층수에 절여진 꾸지뽕 재료에 감미제를 투입하여 꾸지뽕 재료를 발효 숙성시키는 제2단계, 상기 발효 숙성된 꾸지뽕 재료와 탈염된 해양심층수를 추출기에 투입하고, 추출기로부터 꾸지뽕 추출물을 추출하는 제3단계를 포함하여 이루어지는 것을 특징으로 하는 해양심층수를 이용한 꾸지뽕 추출물의 제조방법 및 이에 의해 제조된 꾸지뽕 추출물을 기술적 요지로 한다. 이에 의해 해양심층수를 이용하여 꾸지뽕 추출물을 제조함으로써 꾸지뽕의 유효성분에 해양심층수의 기능성 성분들이 더욱 보강됨으로써 더욱 그 기능성이 향상된 꾸지뽕 추출물을 제공하게 되는 것이다.
