The present invention is directed to an oil and fat composition and raw material thereof and provides not only similar hydrogenated aroma and flavor with conventional arts and long-lasting hydrogenated aroma but also reduced trans fatty acid amount as conventional liquid soya oils.The oxidized partially hydrogenated oil and fat of the present invention are characterized in 10-60 wt% C18 : 2 trans isomer content relative to full composition fatty acid and a peroxide value ranging 8~350meq/kg.本發明之課題,係在提供一種油脂組成物及其原料,其具有與常規相同之氫化香味及風味,同時,不但具有持續性的氫化香味,且將反式脂肪酸含量抑制於一般液體沙拉油。本發明之氧化處理之部分氫化油脂,C18:2反式異構物含量相對於全構成脂肪酸為10~60重量%,而且,過氧化物值為8~350meq/kg。全構成脂肪酸中,C18:2反式異構物含量相對於C18:1反式異構物含量的重量比,以0.3~1.8為佳。
