The present invention has as an objective to provide a composition comprising a hydrophobic phenolic compound selected from the group existing of curcuminoids, theaflavins, isoflavones, and polymethoxylated flavones, wherein the phenolic compound has an enhanced water dispersibility and stability against aggregation and sedimentation and enhanced bio-availability. These objectives are met by submicron particles containing hydrophobic phenolic compound and a hydrophobic polymer comprising one or more prolamines.La présente invention concerne une composition contenant un composé phénolique hydrophobe choisi dans le groupe comprenant les curcuminoïdes, les théaflavines, les isoflavones et les flavones polyméthoxylées, le composé phénolique possédant une meilleure capacité de dispersion dans l'eau, une meilleure stabilité vis-à-vis de l'agrégation et de la sédimentation, et une meilleure biodisponibilité. L'invention concerne en particulier des particules submicroniques contenant un composé phénolique hydrophobe et un polymère hydrophobe comprenant une ou plusieurs prolamines.
