A manufacturing method of mung bean extract includes the following steps: (1) mixing mung bean powder and double-distilled water to obtain a mixture； (2) removing precipitates after oscillating the mixture at 40-60 DEG C by an ultrasonic oscillation method to obtain a crude extract solution； and, (3) performing centrifugation for the crude extract and collecting the upper clean solution to obtain the mung bean extract. During manufacturing process, the present invention does not need to use organic solvent, and the mung bean extract obtained in the following process may achieve whitening and anti-oxidation effects.一種綠豆萃取物的製備方法，包含下列步驟：(1) 混合綠豆粉及雙蒸水，得到混合物；(2) 於40~60℃下，以超音波震盪法震盪該混合物後，移除沉澱物，得到粗萃取液；及(3) 使該粗萃取液進行離心分離後，收集上清液，得到該綠豆萃取物。本發明於製備過程中無需使用有機溶劑，且後續所製得的綠豆萃取物也會具有美白及抗氧化功效。
