PROBLEM TO BE SOLVED: To provide a granule soy sauce having strong roast smell, strong saltiness and flavor.SOLUTION: A powder soy sauce obtained by spray drying soy sauce, a powder soy sauce obtained by drum drying soy sauce and an excipient are blended, then hydrous ethyl alcohol and an edible oil are blended with the resultant to form a wet product, then the wet product is applied to the extrusion granulation and dried to obtain a granule soy sauce having a water content of 0 to 5% (w/w), a particle size of 0.4 to 2 mm, a bulk specific gravity of 0.45 to 0.65 g/ml, table salt of 18 to 40% (w/w), total nitrogen of 1 to 2% (w/w), and carbohydrate of 40 to 65% (w/w).COPYRIGHT: (C)2014,JPO&INPIT【課題】ロースト香が強く、塩味及び旨味の強い顆粒醤油を得る。【解決手段】醤油を噴霧乾燥して得られた粉末醤油と、醤油をドラム乾燥して得られた粉末醤油と、賦形剤とを混和し、次いでこれに含水エチルアルコール及び食用油脂を混和して湿潤物となし、次いでこれを押出造粒し、乾燥して、水分0~5%(w/w)、粒径0.4~2mm、嵩比重0.45~0.65g/ml、食塩18~40%(w/w)、総窒素1~2%(w/w)、そして炭水化物40~65%(w/w)である顆粒醤油を得る。【選択図】なし
