The present invention provides a method for the construction of a bacteriophage-insensitive mutant of a Streptococcus thermophilus parent strain whereby the bacteriophage insensitivity is not based on the CRISPR resistance mechanism but based on another mechanism. The method provides a protocol by which this can be achieved by inactivating one or more of the CRISPR systems present in a given strain. The invention also provides the bacteriophage-insensitive mutants as well as their use in a process for making a dairy product.La présente invention concerne un procédé de construction d'un mutant insensible aux bactériophages d'une souche parente à Streptococcus thermophilus moyennant quoi l'insensibilité aux bactériophages ne repose pas sur le mécanisme de résistance CRISPR mais repose sur un autre mécanisme. Le procédé fournit un protocole par lequel ceci peut être réalisé par inactivation d'un ou plusieurs des systèmes CRISPR présents dans une souche donnée. L'invention concerne également les mutants insensibles aux bactériophages, ainsi que leur utilisation dans un procédé de fabrication d'un produit laitier.
