Disclosed is a manufacturing method of a water soluble carotene composition, comprising: a step of firstly solubilizing carotene with monoglyceride solely or a mixture of medium chain triglyceride (MCT) and monoglyceride a step of heating the firstly solubilized mixture at 120-180°C a step of solubilizing a mixture of polyglycerin fatty acid ester and water separately from the first solubilized mixture and a step of mixing the firstly solubilized mixture and the solubilized polyglycerin fatty acid ester mixture and homogenizing.
