The present invention relates to a method of producing inclusion complexes of phenolic acids and hydroxypropyl-β-cyclodextrin, the method comprising: a first step of preparing the inclusion complexes by mixing hydroxypropyl-β-cyclodextrin (A) in a molecular weight ratio of 1 : 1 with four phenolic acids, namely, hydroxybenzoic acid (B), vanillic acid (C), p-coumaric acid (D), and ferulic acid (E), each dissolved to 4 mM in 50 mL of distilled water； a second step in which the hydroxypropyl-β-cyclodextrin (A) dissolved to 4 mM in 50 mL of distilled water is mixed with each of the four phenolic acids (B, C, D, and E), each dissolved to 4 mM in 50 mL of distilled water, until the final volume reaches 100 mL, and then, each mixture solution produced thereby is reacted for 24 hours in a stirring incubator adjusted at 150 rpm and 30°C； and a third step in which after each mixture solution reacted for 24 hours is filtered through a membrane filter of 0.45 μm, and the filtered solution is freeze-dried using a freeze-dryer and pulverized, thereby producing final four inclusion complexes. The present invention serves to increase the stability of phenolic acids, thereby increasing the applicability of phenolic acids in the food and drug industry.본 발명은 페놀산과 하이드록시프로필-베타-사이클로덱스트린 포접복합체의 제조방법에 관한 것으로, 상기 포접복합체는, 하이드록시프로필-베타-사이클로덱스트린(A)에 페놀산 4종인 Hydroxybenzoic Acid(B), Vanillic Acid(C), p-Coumaric Acid(D), Ferulic Acid(E)를 증류수 50ml에 용해시켜 4mM 되도록 하는 분자량 1:1의 비율로 혼합하여 준비하는 제1 단계와； 상기 증류수 50ml에 4mM로 용해시킨 하이드록시프로필-베타-사이클로덱스트린(A)에 상기 증류수 50ml에 4mM로 용해시킨페놀산 4종(B, C, D, E) 각각을 혼합하여 최종 부피가 100ml이 되도록 한 다음, 그 각각의 혼합액을 150rpm, 30℃로 조정된 교반 항온기에서 24시간 동안 반응시키는 제2 단계와； 상기 24시간 동안 반응시킨 각각의 혼합액을 0.45μm 멤브레인 필터를 통해 필터링한 후, 상기 필터링한 용액을 동결건조기를 이용하여 동결 건조하여 분말화시켜 최종 4종의 포접복합체를 제조하는 제3 단계가 포함되는 것을 특징으로 하는 페놀산과 하이드록시프로필-베타-사이클로덱스트린 포접복합체의 제조방법을 제안함으로써, 페놀산의 안정성을 높임으로서 식품 및 의약품 분야에서 페놀산의 응용성을 향상 시킬 수 있는 효과가 있다.
