PROBLEM TO BE SOLVED: To provide a yeast having high-sucrose resistance, a method for breeding such yeast and a method for applying the yeast to food production.

SOLUTION: Disclosed is a method for obtaining a high-sucrose resistant variant by introducing mutation into OCA1 gene, OCA2 gene or ALD2 gene being a phosphatase which catalyzes dephosphorylation of a phosphorylated protein. Also disclosed is a method for producing high-sucrose dough, bread and confectionery by using a high-sucrose resistant bakers yeast obtained by the method.
