The present invention relates to a manufacturing method of jeotgal (salted seafood) and a jeotgal aging device for preventing the jeotgal from decaying during a manufacturing process. A jeotgal mixture is uniformly aged without decaying in an aging and fermenting step by being injected to the jeotgal aging device having a transfer means and a cooling means.
