The present invention relates to a method for producing an extract containing polyphenol compounds derived from safflower seeds using supercritical extraction and, more specifically, to a method for producing an extract containing polyphenol compounds derived from safflower seeds, which includes the following steps: extracting safflower seeds by using supercritical fluid so as to eliminate fat-soluble components beforehand by pressing oil therefrom; and then hot-water extracting defatted safflower seed cakes produced in the previous step to extract, with high efficiency, the polyphenol compounds as water-soluble active materials contained in safflower seeds.본 발명은 초임계 추출을 이용한 홍화씨 유래 폴리페놀 화합물 함유 추출물의 제조 방법에 관한 것으로, 더욱 상세하게는 홍화씨를 초임계 유체로 추출하여 먼저 지용성 성분을 착유하여 제거한 후, 여기에서 발생되는 탈지 홍화씨박을 열수 추출하여 홍화씨 내에 함유되어 있는 수용성 활성물질로서 폴리페놀 화합물을 고효율로 추출함으로써 홍화씨 유래 폴리페놀 화합물 함유 추출물을 제조하는 방법에 관한 것이다.
