The process includes the use of (Aloe barbadensis Miller) as a raw material, which has been already studied by the working group. This raw material (1) is washed (2) with a sanitizing solution based on chlorine 0.01% and then it is disinfected (3), pulped and set aside for 5 minutes in a solution of citric acid at 5%. Elapsed this time, the pulp is crushed in a conventional blender, the obtained blended product being sieved for obtaining an homogeneous particle size, which is called Aloe vera juice (5) conditioned with the enzymatic extract of Aloe-zym (4) developed in the company. The juice of Aloe vera (5) is brought to the ohmic heating (6) cell and subjected to the discontinuous pasteurization process at temperatures ranging from 65°C, 75°C and 85°C, according to the needs of the juice to be produced and for a period of time of 30 minutes. The data (7) was analyzed and sent to a computer (8) for being registered, as a measure of quality of the developed product. The resulting prod uct is stored under aseptic conditions in a cooling tank (9) and then the Aloe vera (9) concentrate and the fruit concentrate (11) being mixed together, depending on the flavor of the product to be developed, in the ratios established in the process, then being homogenized (12) with a constant agitation, conditioners (13) being added, which also are defined in the process, a second pasteurization (14) being performed in the ohmic heating cell (6) under the same conditions previously described in this process, the mixture being brought back for continuing with the bottling (15) of the final product of the beverage based on Aloe vera.
