The present invention consists in gelled products, such as for example gelatin or gums for food consumption, which include probiotic microorganisms and, in some of its variants, prebiotics, such products being prepared from vegetable beverages such as fruit juices , vegetables, cereals and pulses, which undergo a lactic fermentation process with at least one probiotic strain. Also claimed the process for the production of these products, which consists of the following basic steps: a) Obtaining a pasteurized or sterilized substrate, b) Substrate Fermentation c) Hydration of gelatin and of the Federation in hot water d) cooling the hydrated gelatin e) Addition of fermented vegetable beverage prebiotic selected along with the additives and h) homogenizing the mixture; g) packaging the product.
