PROBLEM TO BE SOLVED: To provide a method for producing mechanically producible Xiaolongbao having handmade feeling.SOLUTION: The method for producing Xiaolongbao having handmade feeling comprises: using a noodle strip which has a thickness of 0.7-1.2 mm (preferably 0.8-1.1 mm, more preferably 0.9-1.0 mm) and contains 0.25-5 pts.wt. (preferably 0.3-3 pts.wt., more preferably 0.4-2.5 pts.wt.) of a thickening agent allowable as food based on 100 pts.wt. of flour comprising wheat flour, at least one kind selected from a group comprising dietary fiber and fibrous protein, and 35-45 pts.wt. of water preparing a material which is made by cutting off the noodle strip in a circular shape and molding the cut-off noodle strip in a bowl shape having 10-15 pleats at its edge part, and is charged with ingredients in an amount enough to be molded sealing the edge part of the cut-off noodle strip while rotating the noodle strip so as to have an angle operative for molding to prepare a molded material with the pleated noodle strip of which the ingredients are enclosed and cutting off the top end of the sealed part of the molded material as unnecessary material in molding.COPYRIGHT: (C)2010,JPO&INPIT【課題】機械化可能な、手作り感のある小籠包を提供する。【解決手段】厚さ0.7~1.2mm(好ましくは0.8~1.1mm、より好ましくは0.9~1.0mm)であり、小麦粉を含む粉類100重量部あたり、0.25~5重量部(好ましくは0.3~3重量部、より好ましくは0.4~2.5重量部)の、食品として許容可能な増粘剤、食物繊維及び繊維状タンパク質からなる群より選択される一種以上、及び35~45重量部の水を含む、麺帯を用いる。麺帯を円形に切断し、縁部に10~15個のひだを形成するように椀状に成型されており、かつ成型上有効量の具材が充填されたものを準備し;麺帯縁部を、成型上有効な角度まで回転させつつ、閉じることにより、ひだ付けられた麺帯に具材の包まれた成型物を得て;そして必要に応じ、成型上不要な成型物閉部の上端を切断除去することにより、製造する。【選択図】図1
