A meat substitute composition comprising protein content in which one or more isolated and purified proteins comprise 10% or more by weight of said protein content, said meat substitute composition accurately reproducing the taste, texture or color of a meat product originating from sources based on animals. 2. The meat substitute composition according to claim 1, which accurately reproduces the color of the specified meat product in its raw state and in the prepared state after cooking.
