PROBLEM TO BE SOLVED: To provide an oil-and-fat composition for cooking which is used in cooking of a food material and can provide a cooked food good in flavor and texture.SOLUTION: An oil-and-fat composition for cooking contains a plant-originated oil-and-fat and an animal-originated oil-and-fat and has a fatty acid composition comprising 30-40 mass% palmitic acid, 0.05-0.3 mass% heptadecanoic acid and 35-45 mass% oleic acid. The oil-and-fat composition for cooking is especially suitable when cooking is deep fry cooking or fry cooking.
