Provided is a soft capsule wherein: a capsule coating composite has increased carrageenan content, thereby maintaining hardness, while the gelation rate and the thickening effect of the carrageenan are moderated; the manufacturability of the capsule is stabilized; and added value can be obtained, such as shelf life, post-drying ease of breaking using fingers, and sound and sensation upon breaking. Also provided is a method for manufacturing said soft capsule. The capsule coating composite of the soft capsule contains, at least, carrageenan, an acidic pH adjuster, and a neutralizer. The method for manufacturing the soft capsule includes a step in which the carrageenan is dissolved by the acidic pH adjuster and a step in which that dissolution is stopped by the neutralizer.
