Provided is a soft capsule wherein: a capsule coating composite has increased carrageenan content, thereby maintaining hardness, while the gelation rate and the thickening effect of the carrageenan are moderated； the manufacturability of the capsule is stabilized； and added value can be obtained, such as shelf life, post-drying ease of breaking using fingers, and sound and sensation upon breaking. Also provided is a method for manufacturing said soft capsule. The capsule coating composite of the soft capsule contains, at least, carrageenan, an acidic pH adjuster, and a neutralizer. The method for manufacturing the soft capsule includes a step in which the carrageenan is dissolved by the acidic pH adjuster and a step in which that dissolution is stopped by the neutralizer.
