the present invention describes a protein isolate of cowpea followed by la production hydrolysate enriched in peptides of antioxidantsunder the action of enzyme protéolytique (alcalase) and, more particularly, the invention relates la purification, identification and characterization of two novel peptides, antioxidant.according to the method of the invention, the antioxydants repose obtaining peptides on a controlled enzymatic hydrolysis of protein in pois chiche under the action of exogenous enzyme.followed by systematic methods de fractionnement, biological tests and identification.in the context of the patent,  lantioxidant activity was found in the isolate et ses protein hydrolysates at different concentrations.according to the present invention, les hydrolysats, having a degree of hydrolysis of 14.67%, more et lantioxidant activity is enhanced with the increase of the concentration.les hydrolysats obtenus were fractionated by gel filtration on sephadex g-25 followed by reverse phase high performance chromatographie liquide (rp hplc).to identify and characterize les peptides fractions p3 and p8 out of rp-hplc, masse dite spectrometry technique in working or ms \/ ms was used.the two peptides gly and asp and val gly asp the ont été identified and molecular masses of 327,33 402,49 da have been recorded in les fractions p3 and p8, respectively.La présente invention décrit lobtention dun isolat protéique de pois chiche suivi de la production d hydrolysats enrichis en peptides antioxydants, sous laction denzyme protéolytique (alcalase) et plus particulièrement linvention rapporte la purification, lidentification et la caractérisation de 2 nouveaux peptides antioxydants. Selon le procédé de linvention, lobtention de peptides antioxydants repose sur une hydrolyse enzymatique contrôlée des protéines de pois chiche sous laction dune enzyme exogène, suivie de méthodes systématiques de fractionnement, de tests biologiques et didentification. Dans le cadre de brevet, lactiv
