PROBLEM TO BE SOLVED: To provide a coloring agent comprising an edible vegetable powder in which the colorant is enriched more than the conventional edible vegetable powder.SOLUTION: Said coloring agent is an edible vegetable powder obtained by: supplying a warm air so that the temperature of exhaust from a comminution chamber 6 is at a temperature in the range of 60 to 120°C, and by the warm air, guiding an edible vegetable toward a rotary blade 3 rotating with a gap spaced from the inner peripheral wall of the comminution chamber 6 and in the comminution chamber 6, airflow-comminuting, as well as simultaneously drying, the edible vegetable by the rotary blade 3 whose tip is rotating at a peripheral speed in the range of 90 to 120 m/second.EFFECT: The colorant in said coloring agent is enriched as compared with the conventional edible vegetable powder colorant obtained by heating-and-drying or vacuum-freeze-drying.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2016,JPO&INPIT【課題】従来の食用植物粉末よりも色素が富裕化されている食用植物粉末からなる色素剤の提供。【解決手段】色素剤は、粉砕室6からの排気温度が60~120℃の範囲の温度となるように温風を供給して、該温風により食用植物を粉砕室6の内周壁と隙間を隔てて回転するローターブレード3に向けて案内し、粉砕室6内で先端が90~120m/秒の範囲の周速で回転するローターブレード3により該食用植物を気流粉砕すると同時に乾燥することにより得られた食用植物粉末。【効果】従来の加熱乾燥または真空凍結乾燥した食用植物粉末色素に対し、該色素が富裕化された色素剤。【選択図】図1
