Chufa peeling procedure. # The procedure is based on rehydrating the chufa that is intended to be peeled and eliminating damaged or defective chufas, so that after draining said chufas, they are mixed with concentrated sulfuric acid at room temperature during a 6 minute treatment time, in which the mixture is constantly stirring. After treatment with sulfuric acid, the chufa is drained and then washed with plenty of water, then treated with pressurized water and thereby remove skins burned by sulfuric acid, finally drying the peeled chufa to reduce moisture to 5 %.Procedimiento de pelado de chufa.#El procedimiento se basa en rehidratar la chufa que se pretende pelar y eliminar las chufas dañadas o defectuosas, de manera que tras el escurrido de dichas chufas, las mismas se mezclan con ácido sulfúrico concentrado a temperatura ambiente durante un tiempo de tratamiento de 6 minutos, en el que la mezcla está constantemente removiéndose. Después del tratamiento con ácido sulfúrico la chufa es escurrida y después lavada con agua abundante, para seguidamente tratarla con agua a presión y eliminar con ello pieles quemadas por el ácido sulfúrico, procediendo finalmente al secado de la chufa pelada para reducir la humedad hasta el 5%.
