FIELD: food industry.SUBSTANCE: invention relates to food industry. In the method, an apparatus for online monitoring of the milk coagulation process is proposed. Above apparatus contains a control and heater-equipped milk temperature measuring sensors, a sensor temperature comparison device, a normalizing transducer and a logger. Wherein the comparison device is configured to calculate the temperature difference between the sensors, where the difference signal of the sensor temperature comparison device controls the operation of the heater power supply through the negative feedback circuit so that the sensor temperature difference remains constant, and the heater current value has served as the measuring signal.EFFECT: invention provides an increase in the accuracy of the measurements.1 cl, 2 dwgИзобретение относится к пищевой промышленности. Предложен аппарат для онлайн мониторинга процесса коагуляции молока. Аппарат содержит контрольный и снабженный подогревателем измерительный датчики температуры молока, устройство сравнения температур датчиков, нормирующий преобразователь и регистратор. Причём устройство сравнения выполнено с возможностью вычисления разности значений температур датчиков, где разностный сигнал устройства сравнения температур датчиков по цепи отрицательной обратной связи обеспечивает управление работой блока питания подогревателя так, чтобы разность температур датчиков оставалась постоянной, а величина тока подогревателя служила измерительным сигналом. Изобретение обеспечивает повышение точности проводимых измерений. 2 ил.
