PROBLEM TO BE SOLVED: To provide a vegetable of an excellent antioxidant capability, and a method of processing the same.SOLUTION: A method of processing a vegetable includes a process of supplying a vegetable with processing water containing a minus hydrogen ion (H) and a process of drying the vegetable supplied with the processing water at a temperature not higher than a prescribed temperature. Preferably, the processing method further includes a process of pulverizing the dried vegetable. The antioxidant capacity of a vegetable supplied with the processing water comprising a minus hydrogen ion (H) can be made greater relative to that of a vegetable not supplied with the processing water.
