The method for manufacturing an adzuki bean extract according to the present invention comprises: an extraction step to add Termamyl, which is a liquefying enzyme, to low-fat soybean active ingredients and adzuki beans by using a supercritical fluid extraction method and for performing heat treatment at the temperature of 60-110°C, thereby extracting adzuki beans an enzyme decomposition step to perform enzyme decomposition on the adzuki bean extract by adding an enzyme thereto and then performing heat treatment thereonto at the temperature of 30-70°C a filtration step to filter via a pressure filter and a filter film a concentration step to concentrate the filtered adzuki bean extract via a low-temperature vacuum evaporator and a sterilization step to sterilizing the concentrate. Thus, the anti-obesity composition using low-fat soybeans according to the present invention reduces the level of blood cholesterol and minimizes destruction of nutrients during processing steps as a food ingredient in which adzuki beans are liquefied and water-soluble by an adzuki bean liquefying and enzyme decomposition step.
