The present invention relates to a mandarin fish farming method including a water temperature maintenance step for maintaining an optimal temperature 25-28 °C by using a temperature control device. As fry hatching dates of carp or leather carp are matched to increase a survival rate of fry of mandarin fish, an early survival rate can be significantly increased, and an optimal temperature for farming mandarin fish is precisely checked to considerably increase production per unit cost. Moreover, as a farming apparatus and stages are newly designed to optimally manage the water quality of a farm by stage, the present invention is capable of preventing the pollution of rivers, caused by effluent from the farm, as well as providing an infrastructure for farming mandarin fish, which are generally known to inhabit first class water, even in second class water (first-b class), thereby providing customized farming technology for maximizing the efficiency of mandarin fish farming.
