Provided is a method for producing mushroom cookie. In order to prepare mushroom cookie, the method of the present invention comprises the following steps: removing some moisture from mushroom so as to produce 3% saline solution and 5% sugar solution adding 5% wasabi or turmeric to adjust salinity, taste, and aroma widely spreading mushroom under high pressure and high temperature condition and baking the same to prepare baked and crispy mushroom cookie. After drying the mushroom cookie to make moisture content less than or equal to 50 wt% after seasoning, the mushroom cookie is immersed in the 3% saline solution and the 5% sugar solution for salting, and then is baked after spread under high pressure and high temperature.COPYRIGHT KIPO 2017버섯쿠키를 제조하기 위하여 버섯의 수분을 일부 제거하여 3% 식염·5% 당분수를 제조하여 5% 고추냉이 또는 강황을 가하여 염도와 맛과 향을 가미한 후 다시 고압·고온 조건에서 버섯을 넓게 펴며 구운 바삭한 버섯쿠키를 제조하는 방법 간을 맞춘 후 수분을 50 중량% 이하로 건조시켜 3% 식염·5% 당분수에 첨적시켜 간을 맞춰서 고압·고온으로 넓게 펴며 굽는 것을 특징으로 하는 버섯쿠키 제조방법을 제공한다.
