The present disclosure provides a method of producing enhanced amounts ofrebaudioside M (Reb M) from varioussteviol glycosides utilizing the hydrolytic activity of beta-glucosidase. Morespecifically, the present disclosure provides an improvedprocess to produce desired steviol glycosides from disrupted recombinant cells(e.g., recombinant microbial cells) containing substratesof interest. This is where such cells (e.g., microbes) have been modified tocany genes capable of generating steviol glycosides ofinterest including rebaudioside A (Reb A), rebaudioside E (Reb E), and/orstevioside. In this embodiment, the process comprises thesteps of obtaining the material from disrupted cells (e.g., microbial cells)and carrying out enzymatic hydrolysis on the steviosidespresent in said waste product to enhance the production of Reb M. Furtherprovided are steviol glycoside compositions produced bythe methods described herein.
