The present disclosure is related to the food industry in general, and in particular, to the field of food technology, engineering and development of novel food products and more specifically, the invention is related to pieces of conglomerate cheese stable at room temperature, characterized by comprising a composition that includes a homogeneous mixture with low water activity composed of milk and / or milk derivatives, pieces of cheese, water, vegetable fat, at least one conservative, an emulsifier, at least one flavoring agent, ingredients to provide texture which can be selected from at least one hydrocolloid, citrus fibers or mixtures thereof said composition being heat processed and solidified at room temperature for producing bars, cubes, slices or other preparations thereof having microbiological and textural stability at room temperature without refrigeration.La presente invención está relacionada con la industria alimentaria en lo general, en lo particular cae en el campo de la tecnología e ingeniería de alimentos y del desarrollo de nuevos productos alimenticio y más específicamente se refiere a trozos conglomerados de queso estables a temperatura ambiente, caracterizados porque constan de una composición que incluye una mezcla homogénea con baja actividad de agua compuesta de leche y/o derivados de leche, trozos de queso, agua, grasa vegetal, al menos un conservador, un emulsificante, al menos un saborizante, ingredientes para otorgar textura seleccionados de al menos un hidrocoloide o fibras cítricas o mezclas de los mismos procesada en caliente y solidificada a temperatura ambiente para generar barras, cubos, rebanadas u otras presentaciones estables en textura y microbiológicamente a temperatura ambiente sin necesidad de refrigeración.
