A method for producing a mannose oligosaccharide (MOS) rich coffee precipitate, the process comprising the steps of: (i) preparing a MOS-containing hydrolyzate obtained from the material remaining after coffee extraction; (ii) contacting the MOS-containing hydrolyzate with an organic solvent to form a suspension; and (iii) precipitation. 2. The method according to claim 1, characterized in that the organic solvent is C-C alcohol. 3. The method according to claim 1 or 2, characterized in that the organic solvent is methanol, ethanol, n-propanol, isopropanol or a combination of two or more of them. The method according to claim 1 or 2, characterized in that the MOS-containing hydrolyzate obtained from the coffee-containing material is at least partially dissolved in water before step (ii). The method according to claim 1 or 2, characterized in that stage (iii) involves reducing the temperature of the suspension and separating the precipitate from the suspension. The method according to claim 5, characterized in that the separation of the precipitate from the suspension is carried out by evaporation, decantation or filtration and optionally includes a preliminary centrifugation step. The method according to claims 1, 2, or 6, characterized in that the ratio of the content of MOS with SP 5-10 to the content of MOS with SP 1-10 in the sediment is at least 50% greater than the ratio of the content of MOS with SP 5-10 to the content of MOS with SP 1-10 in the MOS-containing hydrolyzate. 8. The method according to claims 1, 2, or 6, characterized in that the MOC-containing hydrolyzate is prepared using the steps of: (a) preparing the material remaining after coffee extraction; and (b) thermally hydrolyzing the coffee-containing material to form a MOC-containing hydrolyzate.
