Preparing a composition which release nitric oxide when consumed by humans or animals, comprises providing food, nitrate reducing enzymes or bacteria and acid or providing food containing 5-35% of nitrite of nitrate content and acid contacting food with nitrate-reducing enzyme or nitrate-reducing bacteria at pH of greater than 4 acidifying the solution to a pH value of greater than 3 determining free nitric oxide amount and selecting food or combinations of food, which has at least one of the following properties (a) greater than 5 mg of nitric oxide, (b) high nitric oxide release than the of the sum of the individual components or (c) greater than 10 mg of release of nitric oxide. An independent claim is included for a selective agent with nitric oxide release properties of (a)-(c) comprising at least one component from red beet Chinese cabbage parsley zucchini and one at least one component from green tea rosemary oregano red wine olive juice.
