PROBLEM TO BE SOLVED: To provide methods for preparing isomaltooligosaccharides (IMO) from a carbohydrate substrate and uses thereof.SOLUTION: In the presence of a maltogenic enzyme and additional IMO precursors, an Aspergillus sp. invertase is capable of producing IMOs from a starch slurry.
