An isolated novel oil globule protein encoded by a polynucleotide sequence is provided together with a composition which includes the isolated protein. A transgenic organism transformed by a polynucleotide encoding a protein which at least partially comprises the amino acid sequence of the novel oil globule protein is also provided. The invention also provides a method for producing or enhancing the production of a carotenoid such as astaxanthin, which is an oil globule constituent.Linvention concerne une nouvelle protéine de globule dhuile isolée, codée par une séquence polynucléotidique, ainsi quune composition contenant la protéine isolée. Linvention concerne également un organisme transgénique transformé par un polynucléotide codant pour une protéine contenant au moins partiellement la séquence dacides aminés de la nouvelle protéine de globule dhuile. Linvention concerne encore un procédé de production ou damélioration de la production dun caroténoïde tel que lastaxanthine qui est un constituant de globule dhuile.
