Invention herewith described refers to the procedure and the plant for the production of fresh fruit and vegetable juices without preservatives and heat treatment. According to the invention there is accomplished the defined aim to produce high-quality fruit and vegetable juice for what there is necessary to preserve all the nutritional qualities of the fruit and to obtain high quality pulp for these purposes it is necessary to apply a suitable cutting tool. The obtained juice on its way from the pump (3) to the juice filling machine (10) passes through the system of continuous cooling in the strictly controlled environment of neutral gas. The final product is bottled and the upper part of the bottle is filled with neutral gas prior to its hermetic sealing.Postupkom i postrojenjem za proizvodnju svežih sokova voća i povrća bez konzervansa i termičkog tretmana prema pronalasku ostvaren je definisani cilj da se dobije kvalitetan sok od voća i povrća, za šta je potrebno sačuvati sve nutritivne karakteristike ploda, a da bi se dobila kvalitetna pulpa za ove svrhe potrebno je primeniti odgovarajući rezni alat. Dobijeni sok od pumpe (3) do punilice (10) prolazi kroz sistem stalnog rashlađivanja u strogo kontrolisanoj atmosferi neutralnog gasa. Konačan proizvod je flaširan i u gornjoj zoni boca je ispunjena neutralnim gasom pre njenog hermetičkog zatvaranja.
